🎊Ariba! Ariba!🎊 Bringing In The New Year 2013.

A Great Way to spend the last day of 2012 with family. We decided on Fiesta Night with enchiladas. Short-cut version with Taco Bell Enchilada Dinner kit.

Heat ground beef, steak, chicken, pork, etc. in large pan with oil.
Add seasoning mix and water and raise temp to high until boiling.
Then reduce down and simmer until sauce combines with meat.
Drain excess oil and spoon meat close to the edge of one of the shells (leave some room for folding).
Roll from that end and "seam" side down place the enchilada one by one into a greased (oil spray) glass casserole baking dish.
For ours we added extra cheese, Monterey Jack to be exact ;) Cover it with foil and put it on the middle rack (we have a 3-rack fire oven) and let it bake.

Yummy results when it's done! Cheesy and saucy
And you know we must add Fiesta themed sides to the enchilada party!
Instant Fiesta rice you can buy for $1 at Walmart and refried beans.
Vamos Aqui! I've added sour cream and green chiles for garnish! Delicioso :)
